Fried Oysters

 (Serves 2 people)
 
2 Dozen Shucked Wellfleet Oysters (We recommend Shawn Rose's Jumbo Oysters)
1 1/2 cups Masa Harina or Corn Flour *Do not use Corn Meal*
Vegetable Oil
Salt
Black Pepper
Cayenne pepper

Notes: use Masa Harina for best results. It is easy enough to do these with common kitchen equipment if you do not have a deep fryer!

1. Shuck the oysters

2. Use a deep fryer or fill a pan with three inches of oil.

3. Preheat oil to 260 degrees F

4. Drain the shucked oysters and put them in a collider to allow them to continue to drain.

5. Season the Masa Harina with salt and pepper to taste and add a few shakes of cayenne pepper

6. Spread the seasoned flour in a baking dish

7. Roll the oysters in the flour

8. Drop oysters into the hot oil

9. Cook for 2-3 minutes and remove with either a basket or slotted spoon. Use a timer and don't cook them to death! 

Serve immediately with a wedge of lemon, tartar sauce, or chili sauce.
