The Wellfleet Shellfishermen's Farmers Market will be back in the Fall. In the meantime, please patronize our market sponsor Cape Tip Seafood in Truro or Orleans or Holbrook Oyster in Eastham for Wellfleet's finest shellfish.

Fried Oysters

Fried Oysters

 (Serves 2 people)
2 Dozen Shucked Wellfleet Oysters (We recommend Shawn Rose's Jumbo Oysters)
1 1/2 cups Masa Harina or Corn Flour *Do not use Corn Meal*
Vegetable Oil
Black Pepper
Cayenne pepper

Notes: use Masa Harina for best results. It is easy enough to do these with common kitchen equipment if you do not have a deep fryer!

1. Shuck the oysters

2. Use a deep fryer or fill a pan with three inches of oil.

3. Preheat oil to 260 degrees F

4. Drain the shucked oysters and put them in a collider to allow them to continue to drain.

5. Season the Masa Harina with salt and pepper to taste and add a few shakes of cayenne pepper

6. Spread the seasoned flour in a baking dish

7. Roll the oysters in the flour

8. Drop oysters into the hot oil

9. Cook for 2-3 minutes and remove with either a basket or slotted spoon. Use a timer and don't cook them to death!

Serve immediately with a wedge of lemon, tartar sauce, or chili sauce.
