Fried Oysters w Oyster Gravy
Serves 2
Two Dozen Shucked oysters
1/3 cups flour
1/2 cup Olive Oil
1/4-1/2 tsp garlic powder
1/4 tsp Sumac (no sumac try lemon zest)
1/3 Tablespoons half and half or light cream
Fresh Black Pepper to taste
Cayenne Pepper to taste
Lemon Wedges
Shuck oysters into a bowl, remove meats while reserving the liquor. Pat meats dry and lay on a drying rack let them dry for 15-20 minutes
Sift flour and mix spices into it in a large container with a lid.
Take oyster meats and put them in the container with the flour & spices, put the lid on it and gently toss it until oysters are evenly coated.
Heat a skillet with olive oil under medium-high heat.
Place oysters into the skillet in a single layer being careful to keep them all separated and gently fry for two minutes flip and fry for another two minutes and remove from the pan. It might take two batches depending on the size of your skillet. Do not rise or empty the skillet!
Reduce heat to low and add the oyster liquor to the skillet and whisk vigorously and slowly add the cream or half and half. Stir until the mixture thickens and drain it into a small serving bowl. Congrats oyster gravy!
