Grilled Oyster Rockefeller

2 dozen oysters open on the half shell 
1/2 large sweet valencia onion diced
1 9 oz package baby spinach 
3 TBS Butter (Extra Virgin Olive Oil also works great)
3/4 Cup Cream
1 large clove garlic crushed
1/2 tsp flour
3/4 Cup Romano Cheese
1 Tablespoon Lemon Juice
A few grinds of fresh black pepper

In a large skillet or saute pan melt the butter, add onion and a few grinds of pepper and cook until it begins to caramelize. Add garlic and spinach and cook until the spinach has wilted stirring occasionally. Shake in flour bringing careful to spread it out and not let it clump while stirring immediately add cream stir until well mixed. Continue to stir the mixture until it begins to thicken and remove from heat. 

In a mixing bowl and the cheese some black pepper and the lemon juice and mix thoroughly. 

Assembly, oyster, a spoonful of the spinach mixture, and a spoonful of the cheese mixture. If you like a little bit of heat lightly dust with cayenne pepper!

Pre-heat Grill to about 400F 

Place oysters on the grill, cook until the mixture begins to brown at the edge of the oysters, remove from heat and serve!
