Grilled Oysters Hiroshima Style

Grilled Oysters
There are a countless number of ways to grill oysters find one that fits you. The recipe below is easy for anyone who is unfamiliar with shucking oysters as the grill does the work of opening the oysters for you.

Hiroshima is actually the largest producer of oysters in Japan and this is the preparation unique to the prefecture.


Grilled Oysters Hiroshima Style
Ingredients
Oysters the bigger the better!
Ponzu Sauce premade
or homemade(1/3 cup tamari or 1/2 cup regular soy sauce, 1/3 cup fresh orange juice, 1-2 tablespoons lemon juice, chili paste, or red pepper flake to taste a dash of mirin. If you do not have mirin rice wine vinegar with a teaspoon of brown sugar. If you use red pepper flake mix all of the sauce ingredients and let it sit for an hour.)
Chopped Scallions or Green Onion

Instructions
Get the grill nice and hot 500-600 F
Place Oysters whole on the grill cup side down no sucking required!
Wait for them to crack open and grill for an extra 3-4 minutes
Remove from heat
Use a small knife (paring knife, oyster knife, etc) to cut off the top shell and cut the oyster from the bottom shell.
Pour a little ponzu on and garnish with the scallions some enjoy!
