Original recipe from gold rush in CA!
8-12 Shucked oysters
Grated Pecorino Romano to Taste
1 Cup Wilted Spinach
3-6 Rashers of Bacon (strips lol!) cut into 1 1/2 inch pieces
Fresh Cracked Black pepper to Taste
1/2 cup Green onions
Preheat oven to 350
Mix eggs cheese black pepper
In a oven proof Fry pan spray oils
Sauté spinach till water is out
Pour egg mixture over the spinach in the pan
Set shucked oysters around
Place in oven until eggs set and the top browns
The frittata should slide out of the pan
You can make so many variations of this frittata, oysters and eggs are a great pairing!
