Oyster Tomafella

(Serves 3-4 people)
 
25 Wellfleet Oysters (Buy here) on the half shell
1/2 of a medium-sized sweet onion diced
1-2 Tablespoons Butter
3-4 strips of bacon
1 bunch chopped spinach cooked
Grated Pecorino Romano cheese

1.Preheat oven to 425, place oysters on a baking sheet, can use a layer of rock salt on the baking sheet to seat the oysters. 

2. Melt butter in saute pan add onion cook until translucent and add chopped cooked spinach, mix thoroughly and remove from heat.

3. Cut bacon into 15 one inch strips.

4. Take spinach and onion mixture a put a spoon full on each oyster

5. Sprinkle pecorino romano cheese on each oyster

6. Top each oyster with a strip of the bacon

7. Bake for 10-15 minutes until bacon is crispy.

Serve straight out of the oven.
