Oysters Rockefeller w Gouda

12 Oysters, shucked on the ½ shell
1 pkg chopped spinach (could also use fresh)
¼ t anise flavor or 1 t liquor (to taste)
1 T butter
1 T flour
Splash of Milk
12 slices of gouda, approx. 1” x 2” x ¼ “(any mild cheese will work, e.g., swiss, fontina, or similar)
 
1. Place oysters on baking sheet. Use kosher salt or crumpled foil to keep even. (Or if you have an oyster pan like mine, see picture!)

2. Cook spinach, drain. Add butter till melted. Sprinkle with flour and stir immediately to thicken. Add a splash of milk for creamy texture. Add the anise flavoring and stir again.

3. Put spoonful of spinach on top of each oyster, then top each with slice of cheese.
 
4. Bake at 425 for 10-15 minutes till bubbling and cheese starts to brown. Ready to serve!
